Ingredients

  • Slices of fresh salmon (500 grams for 3 people)
  • Half a glass of sake (or white wine)
  • 3 tablespoons of soy sauce
  • 2 tablespoons of rice vinegar
  • 2 teaspoons of sugar
  • Warts

  • Sharp knife, straight blade

  • Skewers

Procedure

Wash the salmon under running water, now cut it in the middle, forming two half moons, and fillet it: after placing half of the fillet on one side (that of the skin), insert the blade of the knife between the skin and the pulp of the fish, pull the skin, the operation should be almost automatic. In the bowl prepare a mixture of soy, sake, rice vinegar and sugar (you can also add a little ketchup).

Cut salmon into small slices (3-4cm) and soak it in the mixture just prepared, if it is not covered by the liquid you can increase in proportion to the quantities, or turn the salmon at least once, after putting it in the fridge for at least 2 hours (it can be there all day, it is tastier).

At this point you can decide whether to do it in the oven, on the grill or in the pan. The tastiest solution is definitely in the pan: heat a little ‘seed oil, over medium heat cook the salmon, it should not become stingy, so do not exaggerate with cooking, little by little, add after about 5 minutes the sauce of the bowl, cook over high heat until the sauce begins to harden, remove the salmon and leave the sauce a little ‘until it becomes a dark cream dense enough.

Serve the salmon sprinkled with freshly prepared cream. In the oven/grill: while the salmon is getting tasty in the fridge, prepare the leeks, clean them, remove the leaves too much (usually the outer greens are a bit ‘hard) and cut them into cylinders of 1-2cm; put a slice of salmon and leek in the skewers, the sauce of the bowl meanwhile goes into the pan over medium heat until it hardens (as explained above), the skewers are ready, put them in the oven / on the grill (be careful not to touch the bottom of the pan to the salmon, otherwise it sticks), after a cooking of approx. 10min with the resistance of the oven (in the grill a little less), remove them and dish, pouring the cream prepared before.
